White Garlic becomes Black Garlic following a month-long fermentation process under strictly controlled heat and humidity. This very specific process results is a soft, jelly-like texture that is free from odour and has a taste similar to figs.<br><br> From a nutritional point of view, Black Garlic has a much higher content of allicin, the active ingredient in White Garlic that imparts its benefits, but without the odour. Additionally, Black Garlic is rich in amino acids and has almost double the amount of antioxidants when compared to White Garlic. But that is not the whole story.<br><br> Black Garlic also contains an additional very specific compound called S-Allycysteine (SAC) in very high concentrations, compared to White Garlic which is water soluble and thus absorbed easily within the body. S-Allylcysteine has been shown to assist with the absorption of allicin. This makes Black Garlic much more effective than White Garlic for all the benefits mentioned above and additionally it is well tolerated by the digestive system so the chance of gastric distress is completely minimised. <br> The black garlic is shelf stable. Dorset Crofter marks Ford Farm’s first foray into cheese made with sheep’s milk.<br> Inspired by Manchego, Spain’s most popular and famous cheese, Dorset Crofter was the recipient of a Gold Medal at the World Cheese Awards – even before it was named! We are anticipating many more awards as this delicious variety really begins to make an impact on the cheese-eating public.<br><br>Dorset Crofter is made from milk sourced from local Frieslands and Polled Dorsets. The technique employed for the creation of Dorset Farmer is the same as for traditional West Country Farmhouse Cheddar. <br><br> The process is performed almost entirely by hand and the cheese pressed into cylindrical moulds which are then bound in cheese cloth before being left to age, but in the case of Dorset Crofter, for around six months.<br><br> Crofter has a sweet, lingering taste which is smooth and mild, a distinctive butterscotch colour and a slightly crumbly texture.<br><br> Perfect alternative to cows milk cheese. Serve on a cheeseboard, grate onto dishes and over salads.

Once persuaded to try it, even those who profess not to like smoked cheese, immediately fall in love with Dorset Red’s unique flavour and just keep coming back for more.<br><br> Dorset Red is created in the same way that Ford Farm makes its traditional cheddar, using milk sourced from local grazing herds and with the process conducted predominantly by hand. <br><br> However, the heat of the milk is lowered and less stirring is done, resulting in a milder flavour as well as a softer texture. It is pressed into block moulds and left to mature for around three months. <br><br> Dorset Red has a deep amber colour, due to the addition of annatto, a commonly used natural colouring which gives it a similar appearance to a Red Leicester.<br><br>Dorset Red is a smooth, mellow red Leicester style cheese with a distinctive flavour which is slightly sweet and nutty and infused with a deliciously rich and lingering smokiness. Dorset Red is cold-smoked over oak chips, overnight, which bestows it with its distinctive, mellow, smoky flavour.<br><br>Serve on a cheeseboard, grate into dishes, add to quiche recipes, grill onto steak or toast.

This beef is locally-raised, hormone and antibiotic free, grass fed, and finished on hay and oats. It has a little more marbling than grass fed beef. It is butchered in our on-farm facility. You'll receive about a 1/16 of a beef. Each box includes a variety of cuts - typically 3 - 4 roasts (any of the following: round, blade, sirloin tip, brisket), 5 - 8 steaks (any of the following: t-bone, rib, strip, top sirloin), 4-10 packs of ground beef (8 - 22 lbs), 1 pack of stew meat and/or short ribs.
