Coombe Castle Double Gloucester cheese - with its deep orange hue and nutty taste - is perhaps most famous due to a centuries-old event called cheese-rolling: on the last weekend in May every year, men and women chase a wheel of Double Gloucester down Cooper’s Hill in Gloucestershire, England. <br><br> When we say race, we mean scramble, roll, fall and bounce down the hill in pursuit of our large orange friend. This spectacular event has been happening almost every year for at least 200 years, and past participants have even included Edward the Explorer. The prize? A wheel of Double Gloucester as big as the one they launch down the hill, fortunately, here at the Castle, we can help you enjoy the cheese without the chase.

So it isn’t hard to see where we drew our inspiration for this decidedly Irish cheese. <br><br> Dubliner® is a robust aged cow’s milk cheese with a bit of a hard texture similar to a Cheddar. What might seem ambiguous is actually a well-balanced mix of cheese cultures and naturally occurring amino acids. An Irish Cheese of Historical Proportions <br><br> Back in the day – way before your father’s day when he walked to school in the winter for eight miles, barefoot, uphill both ways – cows were as good as currency in Ireland. To protect one of the richest herds and most prosperous pastures of the time, Blarney Castle was built. Now almost 600 years later, our Blarney Castle Cheese is produced using the same verdant green rolling hills and sparkling pure streams that meander through these once fiercely protected lands. And of course, it’s made from the milk of grass-fed cows who graze there. <br><br> It would be hypocritical of us to produce a gourmet Irish cheese called Blarney Castle without living up to its heritage. So automatically it has to be a 100% natural grass-fed cheese without a speck of artificial flavors or additives. Blarney Castle is a mild and creamy cow’s milk cheese with rich and velvety undertones. It both feels and tastes similar to a young Dutch Gouda cheese and makes a perfect complement to fresh fruit and a glass of crisp wine, like Sauvignon Blanc.
Dorset Crofter marks Ford Farm’s first foray into cheese made with sheep’s milk.<br> Inspired by Manchego, Spain’s most popular and famous cheese, Dorset Crofter was the recipient of a Gold Medal at the World Cheese Awards – even before it was named! We are anticipating many more awards as this delicious variety really begins to make an impact on the cheese-eating public.<br><br>Dorset Crofter is made from milk sourced from local Frieslands and Polled Dorsets. The technique employed for the creation of Dorset Farmer is the same as for traditional West Country Farmhouse Cheddar. <br><br> The process is performed almost entirely by hand and the cheese pressed into cylindrical moulds which are then bound in cheese cloth before being left to age, but in the case of Dorset Crofter, for around six months.<br><br> Crofter has a sweet, lingering taste which is smooth and mild, a distinctive butterscotch colour and a slightly crumbly texture.<br><br> Perfect alternative to cows milk cheese. Serve on a cheeseboard, grate onto dishes and over salads.
Launched in 2008 Dorset Red has gone from strength to strength, wowing the Dorset cheese eating public as well as the national and international community, with its deliciously smooth mellow, smoky flavour.<br><br> When Ford Farm takes Dorset Red to Shows across the County, it is very often the most popular choice. Once persuaded to try it, even those who profess not to like smoked cheese, immediately fall in love with Dorset Red’s unique flavour and just keep coming back for more.<br><br> Dorset Red is created in the same way that Ford Farm makes its traditional cheddar, using milk sourced from local grazing herds and with the process conducted predominantly by hand. <br><br> However, the heat of the milk is lowered and less stirring is done, resulting in a milder flavour as well as a softer texture. It is pressed into block moulds and left to mature for around three months. <br><br> Dorset Red has a deep amber colour, due to the addition of annatto, a commonly used natural colouring which gives it a similar appearance to a Red Leicester.<br><br>Dorset Red is a smooth, mellow red Leicester style cheese with a distinctive flavour which is slightly sweet and nutty and infused with a deliciously rich and lingering smokiness. Dorset Red is cold-smoked over oak chips, overnight, which bestows it with its distinctive, mellow, smoky flavour.<br><br>Serve on a cheeseboard, grate into dishes, add to quiche recipes, grill onto steak or toast.
