Truffula intentionally crafts cultured, cashew products as a cheese alternative and seed-based, gluten-free crispbreads – not only for those with dietary restrictions, but also for those who relish flavour without compromise. Everything we make is crafted with organic seeds, herbs, and nuts and thoughtfully prepared using raw food techniques that enhance nutritional value and flavour.
Truffula is a tree nut creamery based in Edmonton, Alberta that handcrafts organic, culinary delights that cater to those with dietary restrictions and those who love to eat great food. Our organic, plant-based kitchen values natural foods and processes, creating intentionally nutritious whole foods bursting with flavour. Painstakingly crafted by Holistic Nutritionist and Raw Food Chef, Allison Landin, Truffula offers versatile, flavourful cultured nut products (essentially cheese alternatives) and gluten-free crispbreads. Driven to create foods that both nourish your body and please your palate, Allison has mastered her craft, honing her recipes and her processes since 2013. Whether you’re looking for a bagel or cracker spread, something to add to your charcuterie board, the perfect creamy base to pair with fruit and honey, or a delectable crunch to pair with cheese, Truffula offers versatile, gourmet artisanal products that don’t compromise on flavour or texture – rather, our foods are unbelievably crave-worthy.
For the culinary connoisseurs and food lovers alike, our white truffle wheel offers the slightly garlicky and musky flavour of white truffles without overpowering the wheel itself. Delicate, earthy, and elegant, we achieve this perfect balance by using Evoolution’s pure white truffle olive oil to flavour this wheel, lending it an intoxicating aroma and flavour. Pair this delectable wheel with aged wine, a fig balsamic, roasted beets, or an arugula salad. It’s also great with pasta and potatoes (miso gravy poutine anyone?).
Studded with black nigella seeds (cumin) from Egypt and dusted with Herbologie’s smoked pimentón paprika, this distinctive wheel is at once rich and smoky, bold and subtle. The paprika is harvested in Extremadura, Spain, where the sweet red pimentón peppers are slowly dried over oak coals, and the black nigella seeds are grown in Fayoum, Egypt where they’ve been cultivated for generations. The slightly sweet paprika bestows this wheel with unparalleled depth and the black nigella seeds add a savoury, slightly bitter flavour. Utterly addictive on its own with crackers, bread, or bagels, this wheel is also fantastic on a charcuterie with honey or as part of a risotto.
Crusted in fresh cracked peppercorns, this velvety wheel blends a mild, tangy flavour with a good, peppery bite. Often compared to a goat cheese’s texture, our aromatic cracked peppercorn wheel is a heat lover’s paradise. Versatile and familiar, this wheel provides a pleasing contrast of sensations: creamy yet crunchy, tangy yet spicy. Match this wheel with a drizzle of olive oil and smear it on crispbread or put it on a platter and serve with chardonnay, dried fruits, and nuts.
A veritable crowd pleaser, our dreamy dill wheel is chock-full of fresh, Alberta dill and complemented with a hint of garlic. And because it’s fermented, it’s slightly sour, just like a dill pickle. Dangerously delicious, spread it on a bagel, smear it on a cracker, or add to a Greek style salad with cucumbers, tomatoes, and bell peppers.
Dubbed the “plain” variety, this jar is anything but plain. Our original cultured cashew creation, we’ve refined this recipe to perfection, it’s simplicity at its best and a go-to in the kitchen. Hands-down our most versatile product, its neutral profile allows it to be transformed into both salty and sweet creations from scrumptious dairy-free cheesecake to Thai curry sauce to pour over pasta, asparagus, or cauliflower.
Because our dreamy dill wheel is a resounding success, we listened to our customers’ wishes for a bigger, more spreadable version and came up with the prairie herb jar. A blend of Chickadee Farms’ dill, sweet basil, and parsley together with extra virgin olive oil, dried onion and garlic, this jar starts out creamy like our original jar, but the olive oil works to give it a more crumbly texture (it’s often compared to a Boursin cheese in texture and flavour). Brimming with fresh herbs, this jar is fan favourite and a top seller. Dip or dollop, this jar is a crowd pleasure and a toothsome treat. Serve on our crispbread, crackers, or bagels or alongside fresh cut veggies.
