Corbeaux celebrates fresh ingredients, exciting flavors, and the
spirit of community.
The owners, brothers Chris and Russ Prefontaine have been in the
food and beverage business their entire lives — since their father
started the company that would eventually become Fratello
Coffee Roasters in 1974.
Through the brothers’ attentiton to detail and ongoing quest to
build relationships with coffee growers all over the world, Fratello
has become a leader in the gourmet coffee business, selling
their wholesale product to likeminded cafes and restaurants that
believe their customers deserve a better bean.
We are applying the same approach that has brought them
success with Fratello to what we do at Corbeaux: if you start with
high quality ingredients and put them in the hands of passionate
professionals, magic is bound to happen. Corbeaux sticks to the
same principles that have always guided us and are committed to.
We work directly with local producers to source our ingredients.
When possible, we source directly from local farms and share
their family stories with your customers.
At Corbeaux we have no intention to try and reinvent our
baking. We’re just reclaiming the way that it should be baked
and reintroducing those traditions to our local community in all
Made using a three-day old sour starter and rested and folded over a two-day process to achieve a natural sourness on the tongue and large eyes in the crumb.
Buns made with a combination of organic bread flour, organic red fife flour, sprouted organic red fife grains and sunflower seeds. Delicious and hearty!
