Zucchini is a summer squash, so it makes sense that it is so plentiful right now at the height of summer. 2 zucchini 2 eggs &#8211; beaten 4 Tbsp flour 2 green onions &#8211; finely chopped Salt and pepper Grate the zucchini.&#160; This can be done by hand or with a food processor.&#160; Sprinkle with a bit of salt and let the moisture come out for a few minutes. Wrap the grated zucchini in a clean kitchen towel and squeeze out the excess moisture. Mix the zucchini with the remaining ingredients until just combined. Heat some oil in a heavy-bottomed pan.&#160; Drop 2 tablespoons of the fritter mixture into the pan and flatten slightly. Flip after 2-3 minutes, or when the zucchini takes on a golden colour.&#160; Keep fritters hot while the rest are cooking.
