Zucchini is a summer squash, so it makes sense that it is so plentiful right now at the height of summer. 2 zucchini 2 eggs – beaten 4 Tbsp flour 2 green onions – finely chopped Salt and pepper Grate the zucchini.  This can be done by hand or with a food processor.  Sprinkle with a bit of salt and let the moisture come out for a few minutes. Wrap the grated zucchini in a clean kitchen towel and squeeze out the excess moisture. Mix the zucchini with the remaining ingredients until just combined. Heat some oil in a heavy-bottomed pan.  Drop 2 tablespoons of the fritter mixture into the pan and flatten slightly. Flip after 2-3 minutes, or when the zucchini takes on a golden colour.  Keep fritters hot while the rest are cooking.
