Garlic Scape season is back! If this is your first summer with The Organic Box, you may be new to <strong>Garlic Scapes</strong>. &#160;Quick refresher: the garlic scape is the juvenile garlic blossom stem that is harvested from the garlic plant before blooming to encourage garlic bulb development. &#160;Garlic scapes have a mild fresh garlic flavour and lend themselves well to stir-fries, pestos and other sauces. &#160;Over the years we have tested many recipes. &#160;See our step-by-step guide to making <a href="" target="_blank">green onion cake-inspired garlic scape cakes</a>&#160;or try your hand at&#160;<a href="" target="_blank">pickled garlic scapes</a>&#160;or an <a href="" target="_blank">easy garlic scape finishing butter</a>. Another easy way to transform garlic scapes is to blend into a dip. &#160;Let the fresh garlic flavour shine! <ul> <li>1 can white (canellini) beans, rinsed and drained</li> <li>3/4 Cup roughly chopped garlic scapes (4-6 scapes depending on size)</li> <li>1 tsp lemon zest</li> <li>juice of 1 lemon</li> <li>1/4 tsp sea salt</li> <li>1 Tbsp olive oil plus more for drizzling</li> </ul> In a food processor or high-speed blender, blend together beans, scapes, lemon zest and juice, and salt until they come together. &#160;With the speed on low, pour in the olive oil and keep blending until your dip reaches the consistency you are looking for. Decant into a serving bowl and drizzle some olive oil on top. &#160;Let stand for 15 minutes to an hour to let flavours combine. &#160;Cover and keep in the fridge for up to 3 days (but it will not last that long!).
