<h2>Winter Delivery Week</h2> <p><span>The weather has gotten downright frosty out there!<span>&#160; </span>In the past, our policy has been to do our best to make sure that members are getting their boxes, and that they aren&#8217;t left out to freeze and go to waste.<span>&#160; </span>Our drivers are calling members who aren&#8217;t home and whose delivery instructions aren&#8217;t explicit. Fresh milk is provided by their mixed herd of well loved cows, who graze on fresh pastures in the summer and are fed homegrown hay, silage and grain in the winter. The farm is certified organic by PACS and uses no pesticides, chemicals, GMO&apos;s or hormones, which adds to the health of their herd and the quality of their cheese. The cheese plant is also dedicated to sustainability, with much of it being solar powered, and the aging caves being controlled by geo-thermal cooling. The milk even arrives to the cheese plant via a gravity fed pipes! The Organic Box is&#160;very excited&#160;to carry Kootenay Alpine Cheese. Here are two varieties available:</p> <p><strong>Nostrala:</strong></p> <p>A firm cheese with mild earthy notes, a subtle creamy texture, and a pale golden interior. It resembles a firmer Italian <em>Fontina</em>, often referred to as the Italian cousin of French <em>Gruyere</em>. It is well suited as a table cheese, cooking cheese, thinly sliced in a sandwich, or as an appetizer or dessert course. </p> <p><strong>Alpindon:</strong></p> <p>This premium reserve is a firm cheese carefully modeled after French <em>Beaufort d&apos;Alpage</em>. Following century&apos;s old tradition this cheese is hand-rubbed and made only with milk from summer pastures. It exhibits a smooth nut flavour, a complex finish, a rich golden interior, and a dark textured rind. Ideal as a table cheese, as an appetizer or dessert course, or in traditional French dishes such as fondue. It has since grown to provide certified organic milk, cream, egg nog, chocolate milk, and cheeses. The Organic Box has been carrying Avalon cottage cheese, sour cream, whipping cream, cereal cream, and medium cheddar cheese for quite some time now. This week we have added <strong>mozzarella </strong>cheese, and <strong>aged white cheddar </strong>to our product catalogue. <br /><br /><strong>Mozzarella </strong>is always a great addition to home made pizzas, but also to salads and as an appetizer with tomatoes, basil and balsamic vinegar. <br /><br /><strong>Aged Cheddar </strong>is an incredibly versatile cheese. Great on sandwiches, nachos, salads, or soups. Ben and Anita Oudshoorn have grown their business and relocated to become one of the most sought after goat cheese producers south of Calgary! </p> <p>Fairwinds is renowned for their flavoured yoghurts which incorporate many delicious seasonal berries and fruits such as saskatoons. However, they also produce some delicious <strong>goat cheeses</strong>. The Organic Box carries their <strong>natural </strong>and <strong>herbed</strong> <strong>soft goat cheese</strong>, <strong>feta </strong>cheese, and their <strong>gouda </strong>goat cheese. All of which are distinctly flavoured and wonderful quality goat milk products from the farms very own goat herd. </p> <p>The goats are herding now and giving birth to their new kids so the milk supply is short (the new goat babies need the milk more than us!) but there is lots of cheese to be had.</p> </td> </tr> </tbody> </table>
