Sometimes, simple is best.  When the avocados are in season – let their flavour and texture shine in this easy dip. <strong>2 ripe avocados</strong> <strong>2 Tbsp fresh lime juice</strong> <strong>Salt</strong> <strong>Water (optional)</strong> <strong>2 Tbsp chopped fresh cilantro</strong> Mash the avocado, lime juice, and a pinch of salt in a bowl with a fork or large mortar and pestle. Mix until you have reached your desired consistency.  Add water by tablespoonful if you would like a smoother dip. Taste and adjust for seasoning. Stir in the cilantro. Get those chips READY!
