A sweet, chewy roll that pairs well with any dinner. <ul> <li>1 Cup milk - heated to just under a simmer</li> <li>1 packet (7g) active dry yeast</li> <li>3 1/2 to 4 Cups flour - divided</li> <li>2 Tbsp sugar</li> <li>1/2 tsp salt</li> <li>2 Tbsp butter - melted</li> <li>1/2 Cup cooked, mashed sweet potato</li> <li>1 egg</li> </ul> Whisk together warm milk and yeast.  Set aside for 5 minutes. In a large bowl or stand mixer, whisk together 3 Cups of flour, sugar and salt.  Add melted butter, egg, sweet potato and yeast/milk mixture until combined. Keep adding flour until a sticky, soft dough forms.  Knead by hand or dough hook for 5 minutes, until smooth. Place the dough in a greased bowl and cover.  Let rise in a warm place until doubled (1 hour). Punch dough down lightly, grease a 9x13 pan, divide dough into 12 balls and place in pan, evenly spread out.  Let rise for 40 minutes.  The dough balls should be doubled in size and just about touching. Bake at 350˚ for 25 minutes, until golden.  Let cool and Enjoy!
