A sweet, chewy roll that pairs well with any dinner. <ul> <li>1 Cup milk - heated to just under a simmer</li> <li>1 packet (7g) active dry yeast</li> <li>3 1/2 to 4 Cups flour - divided</li> <li>2 Tbsp sugar</li> <li>1/2 tsp salt</li> <li>2 Tbsp butter - melted</li> <li>1/2 Cup cooked, mashed sweet potato</li> <li>1 egg</li> </ul> Whisk together warm milk and yeast.&#160; Set aside for 5 minutes. In a large bowl or stand mixer, whisk together 3 Cups of flour, sugar and salt.&#160; Add melted butter, egg, sweet potato and yeast/milk mixture until combined. Keep adding flour until a sticky, soft dough forms.&#160; Knead by hand or dough hook for 5 minutes, until smooth. Place the dough in a greased bowl and cover.&#160; Let rise in a warm place until doubled (1 hour). Punch dough down lightly, grease a 9x13 pan, divide dough into 12 balls and place in pan, evenly spread out.&#160; Let rise for 40 minutes. &#160;The dough balls should be doubled in size and just about touching.
