Ingredients:

  • 2 pounds of Pumpkin flesh
  • 1 cup packed Brown Sugar
  • 2 Cinnamon Sticks
  • 1 inch section of fresh Ginger, peeled, chopped in 4 pieces
  • ½ tsp Ground Cloves
  • ½ tsp Ground Nutmeg
  • ¼ cup Granulated Sugar
  • 2 tbsp Ground Cinnamon

Cut pumpkin in quarters. Remove seeds and stringy pulp. Remove pumpkin skin with vegetable peeler or knife. Cut pumpkin flesh into 1-inch chunks and place in medium saucepan.

Pour water over pumpkin pieces until covered. Cover and bring to a boil for 15 minutes.

Stir in brown sugar and add cinnamon sticks, chopped ginger and spices.

Cover again and boil for another 15 minutes.

Turn off heat and let pumpkin sit in spiced syrup overnight.

Remove pumpkin from liquid and place on drying rack over waxed paper. Ensure pieces are not touching. Allow pumpkin to dry for 12 hours.

Mix ground cinnamon and granulated sugar. Roll each piece in the mixture.
