Fennel is a crunchy treat! Fennel comes from the carrot family and is known for its similar taste to Anise. It pairs nicely with citrus and coriander for a well-balanced, bright side dish.

Ingredients:

  • 1 large fennel bulb, cored and thinly shaved
  • 3 oranges, segmented
  • 1 Tbsp chopped fennel fronds
  • 1 clove garlic
  • 1 shallot, thinly sliced and rinsed in cold water
  • 1 lemon – zested and juiced
  • 1 orange – zested and juiced
  • 2 Tbsp freshly chopped dill
  • Salt and pepper
  • 2 Tbsp extra virgin olive oil
  • ¼ tsp toasted, freshly ground coriander

Instructions:

In a medium bowl, whisk together garlic, shallot, salt, pepper and the juice and zest from the orange and lemon. Fold in the shaved fennel, the fronds and fresh dill. Toss everything to coat with the dressing. Add in the orange segments, drizzle with olive oil and dust with coriander. When serving, spoon any additional dressing over each plate.
