<h2>Sad Newsfor Alberta Organic Milk Producers</h2> <p>Friends,</p> <p>It is with great sadness that I write to let you know that this week Saxby Foods, the processor of our Alberta organic milk, has gone into receivership. The plant has been shut down by its banks and milk production has stopped. This is a huge blow to the local organic food industry in Alberta and all of us here at The Organic Box. The wider organic food community is devastated by this news. Jonathan Avis, the owner of Saxby Foods, fought a long battle to keep the plant open and keep the milk producing but ultimately was unsuccessful. <br /><br />This will be our last week with Saxby milk. We have stock from the last production runwith good dates which we will ship next week. We will explore our milk sourcing options for beyond next week. I am very sensitive to price concerns with milk for families and we will work to source the most cost-effective organic milk available while staying within our principles of supporting local, family-owned businesses and only offering certified organic products. We have a few Alberta options and will also explore importing organic milk from British Columbia. Stay tuned to see how we solve this problem. The cows are in Alberta and the farmers want you to drink their milk. I know we can make something work.</p> <p>In the meantime, I also have bought a large supply of frozen butter from the Saxby Plant so we should have butter for several weeks, but stock up now if you want to ensure you have enough for the next few months. Which is why it is sometimes referred to as <strong>petgrass</strong>. A delicious <strong>mozzarella</strong> and a <strong>aged white cheddar</strong>. They are both wonderful cheeses and are certified organic from Vancouver&apos;s Avalon Dairy Co. </p> <p><strong>Mozzarella</strong> is famous for being used on pizzas, but here is a wonderfully simple appetizer that is easy to make, and delicious to eat:</p> <p>20 - grape or cherry tomatoes, halved <br />20 - fresh basil leaves <br />20 - small balls of fresh mozzarella cheese <br />salt and pepper to taste <br />1/2 cup - balsamic vinegar <br />1/4 cup - extra virgin olive oil <br />20 - toothpicks<br /><br />Using a toothpick, spear a half of a tomato, a piece of basil, a mozzarella ball, and another half of a tomato. Repeat with remaining ingredients. Place on a serving dish and sprinkle with salt and pepper.
