In a large saucepan, melt butter over medium-low heat. Add onions and toss to coat.&#160; Season with salt and pepper. Transfer onions to an oven-safe dish, add the thyme sprigs and begin roasting. Roast until onions are tender and caramelized, tossing occasionally.
