Transform a humble beet into a fun snack! 2 beets 1 tsp olive oil Salt and pepper Preheat oven to 350°. Line 2 baking sheets with parchment. Using a mandoline or your sharpest knife and some careful cuts, slice your beets quite thinly, trying to keep the slices as even as possible. In a large bowl, toss the beet slices with olive oil. Arrange beet slices on the baking sheets in a single layer.  Bake for about 20 minutes, or until the edges just start to dry out. Rotate sheets in the oven and bake for another 10 minutes, watching carefully to make sure the beets do not burn. Transfer to wire rack and cool until crisp.
