Parmesan Spinach Cakes

  • 5 whole Garlic cloves
  • 12 ounces fresh Spinach (10 ounces trimmed mature Spinach equal about 10 cups raw. 10 ounces of Baby Spinach equal about 8 cups raw.)
  • ½ cup Ricotta or Whey Cheese
  • ½ cup Parmesan
  • 2 Eggs

Preheat oven to 400 F

Combine all ingredients in a food processor until finely chopped.

Divide into muffin pan (greased or lined)

Bake 20 minutes, cool for 5 and pop them out of the pan.
