A delicious salad to celebrate all the Fairtrade fruit we have been receiving from our small scale producers in Central and South America. This salad is perfect for potlucks during the barbeque season and makes a great addition with BBQ'd Serben pork! Preparation time 15-20 minutes.

Mango Avocado Salad

  • 2 Fairtrade Mangos
  • 2  Fairtrade Avocados (Should be firm but ripe)
  • 1/4 Cup Red Cabbage
DressingINSTRUCTIONS Dressing
  1. Zest 1 key lime and set aside the zest in a small bowl
  2. Juice all the limes into a small bowl
  3. Add lime zest, olive oil, cilantro, salt, & sugar to the lime juice
  4. Mix well.
  5. (You can for some heat add in some serrano/hot pepper to the lime juice and let it sit for five minutes, then strain out the peppers, continue with the recipe on step 3)
  1. Cube your mangoes and avocados and add them to a medium sized bowl
  2. Chop the red cabbage and add to the bowl
  3. Add the dressing to the salad and lightly mix together
