Every year we make apple juice from the apple crop at our farm in Creston, BC. It is one of the highlights of the season, celebrating the end of a laborious summer/fall of picking cherries and apples. Not that the juicing process is relatively easy, but it yields some of the best tasting apple juice that we've had on our tastebuds. Its a closed Loop System.[/caption] [caption id="attachment_5667" align="aligncenter" width="680"] The juice is fed into this low-temperature pasteurizer that removes any contaminants or pathogens, making the juice shelf-stable for up to 12 months.[/caption] [caption id="attachment_5672" align="aligncenter" width="680"] This is the whole juicing unit - its a mobile trailer that comes right to our farm and does the work right inside the orchard.[/caption] [caption id="attachment_5670" align="aligncenter" width="680"] There goes the apple mash towards the compost area. That big truck in the background is what we use to bring our products to Edmonton each year. Its refrigerated to keep everything nice and fresh.[/caption] The juice is cold-pressed, low-temp pasteurized, and unfiltered to retain the flavour and provide maximum nutrition along with a stable shelf life. This is not your average apple juice, but a beautifully refreshing (and cloudy - on account of being unfiltered) beverage with a sweetly tart profile from our famous Jonagold apples. We sell it in 5L boxes that can sit in your fridge and the whole family can enjoy. Just pull out the tab and pour yourself a glass! Not only is this juice pressed purely from our Jonagold apples, it also is just that and only that! No additives. No water. No fillers. No preservatives. Technically, because it has not even been filtered, what we have here is a soft apple cider. Which means more flavour, and higher nutritional content. Everything is done right on our farm, which is a great way for us to maintain high-quality standards on the apples that go into the juice, as well as lower our carbon footprint since we don't have to truck the apples anywhere to be processed. And one of the best parts - the pulp and mash that is left over from the juicing process is used in our on-farm compost system to provide fertilizer for next years' cherry crop. Now that's a closed loop system.
