Get to know kimchi in this easy weeknight dish! <ul> <li>1-2 Tbsp vegetable oil</li> <li>4-5 green onions, finely sliced, divided</li> <li>1-1½ Cups kimchi, chopped</li> <li>1-2 Tbsp gojuchang or chili paste of choice</li> <li>3-4 Cups cooked rice</li> <li>2 tsp soy sauce</li> <li>1 tsp sesame oil</li> <li>1 fried egg per serving (optional)</li> </ul> Heat oil in a deep frying pan over high heat.  Add the white parts of the green onions and fry for 1 minute. Add the kimchi and chili paste and cook, while stirring for 2-3 minutes. Add the rice, soy sauce and sesame oil.  Mix well to evenly coat all the rice with the kimchi.  If the mixture seems a little too dry, add a few teaspoons of the kimchi brine. Continue cooking for a few minutes until the rice is warmed through and starting to crisp. Add the green parts of the green onion and stir to wilt.
