Get to know kimchi in this easy weeknight dish!

1-2 Tbsp vegetable oil

4-5 green onions, finely sliced, divided

1-1½ Cups kimchi, chopped

1-2 Tbsp gojuchang or chili paste of choice

3-4 Cups cooked rice

2 tsp soy sauce

1 tsp sesame oil

1 fried egg per serving (optional)

Heat oil in a deep frying pan over high heat. Add the white parts of the green onions and fry for 1 minute. Add the kimchi and chili paste and cook, while stirring for 2-3 minutes. Add the rice, soy sauce and sesame oil. Mix well to evenly coat all the rice with the kimchi. If the mixture seems a little too dry, add a few teaspoons of the kimchi brine. Continue cooking for a few minutes until the rice is warmed through and starting to crisp. Add the green parts of the green onion and stir to wilt. Serve hot, topped with a fried egg. Recipe and photo adapted from See the original post here.
