2 Cups raw almonds 1/4 Cup sugar 1/2 tsp salt 1/4 tsp cinnamon 2 Tbsp water 2 tsp oil 2 Tbsp honey Preheat oven to 350°. Cover baking sheet with foil. Roast almonds for about 10 minutes or until lightly browned. Let nuts cool completely.  Save the foil-lined baking pan for later In a small bowl mix together sugar, salt, and cinnamon. Set aside. Combine water, oil and honey in a large sauté pan and heat over medium high heat whisking until it comes to a boil. Add nuts and stir until most of the liquid has been absorbed by the nuts, about 2 minutes.  Add dry spice mixture and stir to coat. The sugar and honey should caramelize and the nuts should be a lovely golden brown. Spread coated nuts in a single layer on the foil-lined baking tray and cool before serving.
