The ultimate quick dish that can be served for any meal. Frittatas keep well, are super versatile and are my favourite way of using up odds and ends left in my fridge the day before my next Organic Box arrives. <ul> <li>8 eggs</li> <li>½ Cup milk</li> <li>1 small onion – diced</li> <li>1 Cup greens</li> <li>1 Cup cooked meat or veggies</li> <li>½ Cup cheese</li> <li>Salt and pepper</li> <li>oil</li> </ul> In an oven-proof skillet, heat oil over medium-high and add the onion. Cook until just softened. Add any other meat and veggies and sauté until cooked or warmed-through. Add the greens and cook until wilted. Whisk together eggs, milk, salt and pepper. Pour egg mixture into the pan, moving it around to get the egg underneath.
