Hot house veggies make for a great salad this week! <strong>Crunchy lettuce</strong> <strong>2-3 tomatoes, seeded</strong> <strong>Cucumber</strong> <strong>1 bunch mint</strong> <strong>1 bunch parsley</strong> <strong>¼ Cup lemon juice</strong> <strong>¼ Cup olive oil</strong> <strong>1 Tbsp powdered sumac</strong> <strong>2 pita breads</strong> Preheat the oven to 400°F.  Split the pita bread and chop into bite-sized pieces.  Drizzle with a little olive oil and bake on a single layer for 5-7 minutes or until golden and crispy. Roughly chop the lettuce, cucumber and tomatoes. Chop the mint and parsley and toss with the veggies.
