Citrus Season is in full swing and one of our favourites this time of year is the flavourful blood orange. <ul> <li>1 &#189; lbs beets</li> <li>1-2 blood oranges</li> <li>2 tbsp toasted walnut oil</li> <li>2 tbsp shallots &#8211; minced</li> <li>&#189; tsp Dijon mustard</li> <li>Salt and pepper</li> <li>2 cups greens</li> <li>1/3 Cup chopped nuts</li> <li>2 tbsp goat cheese</li> </ul> Halve the beets and cook in boiling water for 15-20 minutes. Peel. Segment the oranges over a bowl.&#160; Squeeze any remaining juice into the bowl. To the orange juice, add shallots, mustard, oil, salt and pepper. Whisk to combine Toss greens, beets and oranges in dressing.
