If you remember we posted about how our bananas are <a href="https://blog.theorganicbox.ca/why-no-bananas/" target="_blank">special</a> earlier this year and how to <a href="https://blog.theorganicbox.ca/banana-magic/" target="_blank">ripen</a>&#160;them at home if you ever receive green ones. Our Fairtrade bananas are a staple in our boxes each week and why not make some delicious banana bread for lunches or snacks to celebrate Fairtrade month! INGREDIENTS <ul> <li>1/2 cup salted butter, softened</li> <li>3/4 cup cane sugar</li> <li>1/2 tsp. salt</li> <li>2 large eggs</li> <li>1 cup all-purpose flour</li> <li>1 cup whole wheat flour</li> <li>1 tsp. baking soda</li> <li>3 ripe Fairtrade bananas, mashed</li> <li>1 tsp. vanilla extract</li> <li>1/2 cup walnuts, coarsely chopped</li> <li>&#160;1/2 package of Fairtrade Camino semi-sweet chocolate chips</li> </ul> INSTRUCTIONS <ol> <li>Preheat oven to 350F</li> <li>Grease 9x5x3" bread pan</li> <li>Cream butter and sugar until light and fluffy</li> <li>Add large eggs, one at a time after beating well</li> <li>Mix all-purpose &amp; whole wheat flour, baking soda, and salt in large bowl</li> <li>Add flour mixture to the creamed mixture</li> <li>Add Fairtrade mashed bananas, vanilla extract, Fairtrade chocolate chips and coarsely chopped walnuts</li> <li>Pour mixture into pan and bake for 50 to 60 minutes</li> <li>Cool in pan for 10 minutes on rack</li> </ol> Chocolate chips and walnut are optional. Try with chopped up dates and pecans, or any combination you like.
