If you are like us, you have a few over-ripe bananas in your freezer at this exact moment. 1 heaping Cup very ripe banana - mashed ⅓ Cup honey or maple syrup ⅓ Cup unsweetened applesauce 1 tsp vanilla ¾ Cup milk 1 ½ Cups whole wheat pastry flour 1 Cup rolled oats 1 ½ tsp baking powder ¾ tsp baking soda ¼ tsp salt 1 tsp cinnamon Preheat oven to 350°.  Grease a 9-inch loaf pan. In a medium bowl, whisk together the dry ingredients until well-combined.  In a separate bowl, mix together the wet ingredients.  Add to dry ingredients and stir until just incorporated. Pour batter into loaf pan and bake for 45-60 minutes.
