An easy weeknight dessert that lets the apple shine. 2 Large apples, cored 1 Cup rolled oats 1 tsp cinnamon ¼ tsp nutmeg 4 dates, pitted and chopped 1 Tbsp chia seeds ¼ walnuts or pecans, chopped 1 ½ Cups almond milk 1 tsp vanilla 1-2 Tbsp maple syrup Preheat oven to 350˚. Once the apples are cored, set aside. Mix together the remaining ingredients. Find a dish that will hold the apples upright.  Spoon the granola mixture into the apples and pack any remaining mixture around the apples to keep them from toppling over.
