<p class="bodycopy"><span lang="EN-US">We can’t say enough great things about beets.  They are sweet, earthy, come in all shapes, sizes and colours. Best of all, beets are a super winter treat.</span></p> <p class="bodycopy"><span lang="EN-US">Beets do really well in cold storage, so the lovely jewel-toned roots you are cooking and loving this week were actually harvested last fall.</span></p> <p class="bodycopy"><span lang="EN-US">We see beets in three major colours; the classic red or purple beet, the sunny golden beet and the playful striped beet.  Although all three varieties are similar in flavour, each type lends itself to different preparations.</span></p> <p class="bodycopy"><span lang="EN-US">If you are looking to make your family’s famous borscht, reach for the purple beets to get that deep fuchsia hue.  For a bright take on your favourite beet salad, try out the golden beets.  Their warm colour and mellow sweetness pair well with a dark leafy green.  For a showy addition to a plate, seek out the striped beets.  Similarly sweet and earthy, the pronounced striping is fun and unexpected.  </span></p> <p class="bodycopy"><span lang="EN-US">There is truly a beet for every occasion and there is no better time to jump into the world of beets and find your best beet recipe.  All week long we will be celebrating all beet-y things.  Can’t Beat those Beets!</span></p>
