This dumpling is inspired by our co-founder, Ray’s favourite Korean dish: kimchi pork belly. Ray made this dumpling at our first dumpling making party and everyone loved it! It has since become one of our most popular limited edition flavours. This delicious sweet and spicy dumpling features thin strips of pork belly stir fried with kimchi in a spicy-sweet blend of Korean chili paste, garlic, ginger, soy sauce, and sesame oil. To make this dumpling more special, we partnered with our favourite local Korean restaurant, Nongbu Korean Eatery to use their housemade perfectly fermented kimchi! Nongbu’s kimchi uses the owner John’s mother’s traditional techniques that have been passed down generation after generation. Her kimchi is made without the convenience of modern shortcuts commonly used when making kimchi. There are no added preservatives or artificial fermenting agents used. All of her kimchi is fermented naturally which is a time consuming process, but the result is well worth it!
