These cookies are sure to become part of your holiday baking each year!

Ingredients

  • 75 g Organic Butter or Coconut Oil
  • 1/4 cup Organic Coconut Sugar or Superfine Sugar
  • 1/2 cup Milk of your choice
  • 125 g Self Raising Flour
  • 1 tsp Spice Sanctuary ground Coorg Cardamom
  • 1/2 tsp Organic Vanilla Extract
  • 1 tsp Baking powder
  • 1.5 cups Fresh or unsweetened dessicated Coconut, grated
  • 1/4 cup Ground Pistachios

How to Make

  • Preheat the oven to 350F.
  • Whisk the butter/oil with the sugar in a bowl until well combined.
  • Gradually, add the milk and whisk together well.
  • Add the flour, cardamom, vanilla and baking powder and mix together really well before folding in the coconut and pistachios into a soft dough consistency.
  • Place a tablespoon of the mixture on a baking sheet and repeat, leaving space between cookies until all the mixture has been spooned.
  • Bake for about 20-25 minutes until golden brown.
